These Mixed Berry & Lemon Yoghurt Muffins are light and fluffy and can be made as 24 mini muffins or 12 normal sized ones.  Prep time is 5 – 10 mins depending on whether you have a little helper or not cooking time is 15 – 20 mins for mini or 25 – 30 for normal sized.

Can be stored in an air tight container for 2 – 3 days (best in the fridge after the first day).

* If gluten intolerant these can be made as low gluten muffins by replacing the flour with GF flour but they still have rolled oats in them – you could use GF oats or omit the oats and add extra flour.

Regular method is up first followed by the Thermomix one

Serving suggestion:  As a snack or also great as part of a brunch menu.

Mixed Berry & Lemon Yoghurt Muffins

Ingredients

  • 1 1/4 C (350g) Greek yoghurt
  • 1/3 C (80 ml) grapeseed oil
  • 1 egg
  • 1 lemon zest finely grated
  • 1 3/4 C (260g) wholemeal SR Flour
  • 1/3 C (75g) raw caster sugar
  • 1/4 C (20g) rolled oats
  • 1 tsp baking powder
  • 1 C (150g) fresh or frozen mixed berries

Instructions

  1. Preheat oven to 180 C. Line a 12 whole muffin pan or a 24 whole mini muffin pan with silicon or paper cases.
  2. Put yoghurt, oil, egg and lemon zest in a bowl & whisk to combine
  3. In a bigger bowl mix flour, sugar, oats, and baking powder then make a well in the centre and pour in the yoghurt mix and mixed berries and stir until just combined
  4. Using a tablespoon put batter into muffin cases then bake for 15 - 20 mins for mini muffins or 25 - 30 for normal sized or until a skewer inserted into the middle comes out clean.
  5. Turn out onto a wire cooling rack to cool
  6. Eat them!

Ingredients

  • zest of 1 lemon
  • 1 1/4 C (350g) Greek yoghurt
  • 1/3 C (80 ml) grapeseed oil
  • 1 egg
  • 1 3/4 C (260g) wholemeal SR Flour
  • 1/3 C (75g) raw caster sugar
  • 1/4 C (20g) rolled oats
  • 1 tsp baking powder
  • 1 C (150g) fresh or frozen mixed berries

Instructions

  1. Grate lemon zest 20 sec / speed 7 scraping down the sides if required
  2. Then place onto yoghurt, oil and egg and whisk 7 sec / speed 5
  3. Add flour, sugar, oats, baking powder and mixed berries and mix 20 sec / reverse/ speed 6 until combined - you may need to assist with spatular and scrape down the sidesUsing a tablespoon put batter into muffin cases then bake for 15 - 20 mins for mini muffins or 25 - 30 for normal sized or until a skewer inserted into the middle comes out clean.
  4. Turn out onto a wire cooling rack to cool
  5. Eat them!
