Banana Yoghurt Muffins

We love these Banana Yoghurt Muffins in our house and they are a different take on the usual Banana Bread.  “Moist” is on my most disliked words list but the yoghurt in these makes them just that.  These can be made and ready to eat in 35 mins or less.  This recipe makes 12 normal sized muffins or 24 minis or a combination of both!  Thermomix recipe at the bottom.

Can be frozen.

Banana Yoghurt Muffins

Ingredients

  • 2 large very ripe bananas
  • 1 C natural yoghurt
  • 1 egg
  • 2/3 C oil (vegetable, grapeseed, olive or coconut can be used)
  • 3/4 C SR Flour (to make these gluten free I used 3/4 C of brown rice flour and 1 tsp baking powder)
  • 1/2 C raw caster sugar
  • 2 tsp cinnamon

Instructions

  1. Preheat oven to 180 C & line 12 hole muffin tin (or 24 mini) with patty cases
  2. Mash the bananas in a big bowl
  3. Add yoghurt, egg, oil to the bananas and stir to combine
  4. Sift the flour & sugar into the mix and stir to combine. (Add extra flour if too runny)
  5. Spoon mixture into muffin tin
  6. Bake for 20 - 25 mins or until an inserted skewer comes out clean
  7. Stand muffins in the tin for 5 mins before turning out onto a wire cooling rack to cool.

Banana Yoghurt Muffins - Thermomix

Ingredients

  • 2 large very ripe bananas
  • 120 g natural yoghurt
  • 1 egg
  • 45 g oil (vegetable, grapeseed, olive or coconut oil)
  • 65g SR Flour or brown rice flour & 1 tsp baking powder
  • 60 g raw caster sugar
  • 2 tsp cinnamon

Instructions

  1. Pre-heat the oven to 180 C & line a 12 whole muffin tin (or a 24 whole mini muffins) with patty cases
  2. Mash the bananas in the bowl Speed 4 / 5 seconds
  3. Add yoghurt, egg & oil to the banana and combine Speed 4 / 7 seconds
  4. Add flour & sugar to the mix and Speed 4/ reverse/ 20 seconds until combined.
  5. Spoon the batter into the muffin tins
  6. Bake for 20 - 25 mins or until an inserted skewer comes out clean
  7. Stand muffins in the tin for 5 minutes before turning out onto a wire cooling rack to cool.
