Chicken, Sweet Potato & Carrot Patties

Chicken,-sweet-potato-&-carrot-patties-webDinner one night, lunch the next day, these healthy and tasty patties are really versatile and quick to make.  This is more of a kids meal but no reason why the whole family can’t indulge. Also if you have people that aren’t keen on veggies you can hide many in them too.  This recipe makes about 25 patties.

I make mine with quinoa to make them gluten free but you could use breadcrumbs instead.  Below are both traditional and Thermomix methods.

As a serving suggestion you could do corn cobs, broccoli, peas or beans or in the lunchbox with veggie sticks.  They also are lovely as a burger with some baby spinach, bit of mayo in a toasted bun or wrapped up in lettuce leaves – lots of choices!

Timesaver Tip: any leftovers can be frozen for up to 3 months

Chicken, Sweet Potato & Carrot Patties

Ingredients

  • 1/2 large sweet potato, peeled and grated
  • 1 carrot grated
  • 500 g chicken mince (organic or free range if you can)
  • 1 egg
  • 3/4 C cooked quinoa (precook this following packet instructions and keep in fridge until ready) OR breadcrumbs
  • 2 Tbs chia seeds (optional)
  • Olive oil

Instructions

  1. Preheat oven to 200 degrees and line 2 baking trays with baking paper
  2. Grate the veggies into a large bowl
  3. Mix the chicken mince, egg, quinoa (or breadcrumbs) & chia seeds
  4. Once combined, scoop out a heaped tablespoon of the mixture and shape into a patty
  5. Place patties on lined baking trays and drizzle some oil and bake for about 30 minutes or until golden brown

Ingredients

  • 1/2 large sweet potato (350-400 g), peeled and roughly chopped into chunks
  • 1 large carrot
  • 500 g chicken mince (organic or free range if you can)
  • 1 egg
  • 100g cooked quinoa
  • 2 Tbsp chia seeds (optional)

Instructions

  1. Grate the veggies in TM 10 seconds / speed 7
  2. Add chicken mince, egg, quinoa & chia 20 seconds / reverse / speed 4
  3. Once combined, scoop out a heaped tablespoon of the mixture and shape into a patty
  4. Place patties on lined baking trays and drizzle some oil and bake for about 30 minutes or until golden brown
