Detox Thai Soup – or anyday Yummy Thai Style Soup

Beautiful fresh ingredients make this easy & tasty soup a power packed nourishing meal.  It can be eaten hot or cold. The recipe below is for a Thermomix but you can do it in a stock pot on a simmering heat and then just blend at the end, it takes a bit longer but will still have the same result.  I was inspired by Cindy Luken for this recipe, check out her beautiful site Lukbeautifood and her 10 minute Thai Ginger Soup.

Detox Thai Soup – or anyday Yummy Thai Style Soup

Ingredients

  • 1/2 red capsicum, chopped in half
  • 1 carrot, skin on roughly chopped
  • 1 stick celery, roughly chopped
  • 1 spring onion
  • handful of cabbage
  • slice lemon
  • handful of cashews
  • 1 clove of garlic
  • 2cm of ginger, skin on
  • 2cm tumeric, skin on
  • small handful corriander,
  • small bunch of parsley
  • 4 stems of silver beet
  • 1 kaffir lime leaf (if you have)
  • 650ml water (3 cups)

Instructions

  1. Place all ingredients in the bowl, except for the water & chop speed 9 / 5 seconds, scrape & repeat. This is just to make space for the water
  2. Add water and cook 10 minutes/ 100 degrees / speed 1
  3. Blend 5 seconds / speed 9
