Lady Marmalade

A friend gave me all these gorgeous oranges from her tree today which got me thinking about how to use them.  It’s been a busy day in the Boiled Eggs & Soldiers Kitchen!  

I’ve never made marmalade before but love it on toast so I gave it a try.  For other orange recipes check out the Orange Yoghurt Cupcakes and Jaffa Biscuits.

Sorry that I’ve only done a Thermomix recipe but it made it very easy and quick and it’s a great combination of tart and sweet. To make the marmalade you will need 2 oranges and a lemon, water and sugar.  Makes about 500 mls in only 30 minutes.

I’m looking forward to breaky tomorrow with freshly squeezed orange juice and marmalade on toast!

Lady Marmalade – a quick Thermomix recipe

Ingredients

  • 425 g oranges, cut into quarters and any pips removed
  • 50 g lemon cut in half, use one half cut in half again, pips removed and juice the other half and discard the peel
  • 150 g water
  • 400 g raw caster sugar

Instructions

  1. Put oranges, lemon half and lemon juice in the TM bowl and chop for 5 seconds / speed 6.
  2. Add water and cook 100 degrees / 15 minutes / speed 1
  3. Add sugar and cook for a further 15 minutes / Varoma / speed 2. Remove MC and put TM basket on top to catch splashes.
  4. Put in sterlised jars and allow to completely cool before putting lids on.
