Leek, Cashew & Almond Milk Soup – sounds weird but is nice!

Yet another detox soup which I wouldn’t have normally attempted or eaten but on day 3 of a detox when hunger has kicked in this is very filling, gives a protein hit and is full of flavour.  If you are looking for a creamy soup without the dairy this is a good option.  Go on…try it!  In a Thermomix it’s very quick and easy also pretty quick using a blender and saucepan but just uses more implements!

Leek, Cashew & Almond Milk Soup – Thermomix

Ingredients

  • 1 leek, white part only, roughly chopped
  • 10 g olive oil
  • 200 g raw cashews
  • juice of 1 lemon
  • 6 stalks of spinach, leaves only
  • 1 litre almond milk

Instructions

  1. Chop cashews, Speed 8 / 8 seconds set aside
  2. Chop leek, Speed 4 / 3 seconds and then saute 3 minutes / 100 degrees / speed 1
  3. Add all other ingredients, including cashews cook 8 minutes / 80 degrees / reverse / speed 1
  4. Blend speed 8 / 10 seconds

Ingredients

  • 1 Tbs olive oil
  • 1 leek, white part only, thinly sliced
  • 10 g olive oil
  • 200 g raw cashews, crushed finely in a blender
  • juice of 1 lemon
  • 6 stalks of spinach, leaves only & roughly chopped
  • 1 litre almond milk

Instructions

  1. Heat oil in large saucepan and saute leeks until soft
  2. Add all other ingredients and heat until spinach leaves are wilted
  3. Take off the heat and blend with a stick blender or in a blender
