Orange Yoghurt Cupcakes

Navel oranges are in season in Australia at the moment so it’s a great time to make these healthy, light & fluffy cupcakes.  These are delicious served warm just out of the oven but they are also on high rotation in the girls lunch boxes.

I have used Rice Malt Syrup instead of sugar but if you want to use sugar use 3/4 C raw caster sugar.   The batch I made today was using store bought Gluten Free SR flour and they were yummy.

The recipe makes 12 cupcakes. (I have just updated this for the Thermomix so both recipes are now below)

They can be stored in the fridge for up to 5 days or can be frozen.

Orange Yoghurt Cupcakes

Ingredients

  • 125 g softened unsalted butter
  • 1/2 C Rice Malt Syrup for a sugar free version
  • 1 1/2 Tbsp orange zest (finely grated)
  • 2 eggs
  • 1/4 C fresh orange juice
  • 2/3 C Greek style yoghurt (or whatever plain yoghurt you have)
  • 1 1/3 C wholemeal SR flour (use Gluten Free if necessary)
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 170 degrees & line a 12 hole muffin tin with patty cases.
  2. Using an electric beater, beat butter, sugar, and orange zest for 4 - 5 minutes until light and fluffy
  3. Gradually add eggs and beat until well combined.
  4. Using a large metal spoon fold through orange juice, yoghurt, flour and baking powder until just combined.
  5. Spoon the mixture into the prepared muffin tin and bake for 15 - 20 minutes or until an inserted skewer comes out clean.

Orange Yoghurt Cupcakes - Thermomix

Ingredients

  • 1 orange (for zest and juice)
  • 125 g softened unsalted butter
  • 150g Rice Malt Syrup for a sugar free version
  • 2 eggs
  • 150 g Greek style yoghurt (or whatever plain yoghurt you have)
  • 190 g wholemeal SR flour (use Gluten Free if necessary)
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 170 degrees and line a 12 hole muffin tin with patty cases
  2. Peel the orange and put zest into TM grate 10 seconds / speed 9
  3. Add butter, rice malt syrup and mix 15 seconds / speed 4
  4. Add eggs 4 seconds / speed 3
  5. Add the juice of the orange (about 50 g), yoghurt and flour and combine 10 seconds /speed 3.
  6. Pour out or spoon mixture evenly amongst the patty cases and bake for 15 - 20 minutes or until an inserted skewer comes out clean.
