Soup Down Mexico Way – Tomato & Kidney Beans

Another nourishing soup I made on my detox, this is full of flavour and goodness.  The red kidney beans give it a much needed protein boost that can often be lacking when you are detoxing.  This makes 3 x 600mls. Make it, it’s good.

Soup Down Mexico Way – Tomato & Kidney Beans - Thermomix

Ingredients

  • 1/2 brown onion, halved
  • 1 carrot, roughly chopped
  • 1 celery stalk, roughly chopped
  • 1 kg roma tomatoes, quartered
  • 1 clove garlic
  • 5 - 6 sprigs of parsley
  • 6 sprigs coriander
  • 1 tsp paprika
  • 1/2 tsp ground ginger
  • 1/2 tsp cumin
  • 1/2 tsp tumeric
  • 400 g tin red kidney beans, drained
  • 600 g water

Instructions

  1. Put tomatoes, oil, onion & garlic in bowl 1 minute speed 10
  2. Then cook 30 minutes / Varoma / speed 1 with MC removed as it will splash
  3. Add herbs and spices and blend 4 secs / speed 6 (MC back on)
  4. Add kidney beans & water and cook for a further 10 minutes / 100 / speed 1
  5. Blend 4 seconds / speed 5

Ingredients

  • 1/2 brown onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 kg roma tomatoes, quartered
  • 1 clove garlic, crushed
  • 5 - 6 sprigs of parsley, leaves only
  • 6 sprigs coriander, leaves only
  • 1 tsp paprika
  • 1/2 tsp ground ginger
  • 1/2 tsp cumin
  • 1/2 tsp ground tumeric
  • 400 g tin red kidney beans, drained
  • 600 mls water

Instructions

  1. Heat oil in a stock pot or large saucepan and then saute onions, garlic & celery until soft & translucent
  2. Ad tomatoes, carrots and all the herbs except the rocket & 250 mls of the water bring to the boil and simmer for 30 minutes, stirring occasionally, add extra water if drying out
  3. Add remaining water, stock concentrate & kidney beans and cook for a further 10 minutes
  4. Turn off the heat and add the rocket and blend with a stick blender or blender
