Thai Style 3 C’s Soup – Coconut, Chickpea & Cauliflower

This hearty soup will warm & fill you up as the days get cooler.  I need to credit “cindyalice” as the inspiration for this recipe – I was hunting around the Thermomix Recipe Community website and came across her yummy version of this soup but adapted it for my tastebuds.  I’ve made both a Thermomix and regular cooking recipe below. Recipe will serve 4 people

This doesn’t need any other accompaniments as it’s really filling.   Can be frozen.

Thai Style 3 C’s Soup – Coconut, Chickpea & Cauliflower - Thermomix

Ingredients

  • 1 brown onion, halved
  • 1 clove garlic
  • 10 g olive oil
  • 350 g cauliflower, roughly chopped
  • 400 g tin lite coconut cream
  • 400 g tinned chickpeas, drained & rinsed
  • 150 g passata
  • 150 g water
  • 1 Tbsp vegetable stock concentrate
  • 4 - 5 fresh basil leaves

Instructions

  1. Chop onion & garlic speed 5 / 5 seconds
  2. Add olive oil and saute for 3 minutes/100 degrees/ speed 1
  3. Put cauliflower into bowl and chop speed 3 / 4 seconds, scrape down the sides
  4. Add all other ingredients and cook 20 minutes/100 degrees/ reverse / speed 1
  5. For a less chunky consistency speed 4 / 4 seconds or speed 9 / 10 seconds if you want it smooth

Thai Style 3 C’s Soup – Coconut, Chickpea & Cauliflower

Ingredients

  • 1 brown onion, thinly diced
  • 1 clove garlic, crushed
  • 2 Tbs olive oil
  • 350 g cauliflower, chopped into small florets
  • 400 g tin lite coconut cream
  • 400 g tinned chickpeas, drained & rinsed
  • 150 ml passata
  • 150 ml water
  • 1 Tbsp vegetable stock concentrate
  • 4 - 5 fresh basil leaves

Instructions

  1. In a large saucepan heat the olive oil and then saute the onion and garlic until translucent.
  2. Add all other ingredients and bring to the boil
  3. Lower the heat to simmer for 20 - 25 minutes stirring regularly
  4. Use a stick blender to break down the soup into your desired consistency.
