Tomato, Chickpea & Herb Soup

Healthy, warming and nourishing.  I had this as part of a detox so didn’t add the stock concentrate as didn’t want the salt but if you are not detoxing it definitely gives it some more flavour so I will leave it up to you to leave in or out.  Below is both a Thermomix and normal version of this recipe.

Tomato, Chickpea & Herb Soup - Thermomix

Ingredients

  • 1/2 brown onion, halved
  • 1 carrot, roughly chopped
  • 1 celery stalk, roughly chopped
  • 1 kg roma tomatoes, quartered
  • 1 clove garlic
  • 2 cm fresh tumeric
  • 5 basil leaves
  • 1 sprig rosemary, leaves only
  • 2 -3 sprigs thyme
  • 2 sprigs oregano
  • 400 g tinned chickpeas, drained
  • 1 Tbsp Thermomix vegetable stock concentrate
  • 500 g water
  • 2 handfuls baby rocket

Instructions

  1. Put everything except the chickpeas, water & rocket into the bowl and blend 1 minute / speed 9
  2. Cook 30 minutes/ Varoma / speed 1 MC removed as it will splash
  3. Then add chickpeas and water & cook for a further 10 minutes / Varoma / reverse speed 1
  4. Add baby rocket 5 minutes/ reverse / speed 1

Tomato, Chickpea & Herb Soup

Ingredients

  • 1 Tbsp olive oil
  • 1/2 brown onion, finely chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 kg roma tomatoes, quartered
  • 1 clove garlic, crushed
  • 2 cm fresh tumeric, crushed
  • 5 basil leaves
  • 1 sprig rosemary, leaves only
  • 2 -3 sprigs thyme
  • 2 sprigs oregano
  • 400 g tinned chickpeas, drained
  • 1 Tbsp Thermomix vegetable stock concentrate
  • 700 mls water
  • 2 handfuls baby rocket

Instructions

  1. Heat oil in a stock pot or large saucepan and then saute onions, garlic & celery until soft & translucent
  2. Add carrot, tomatoes, tumeric, and all the herbs except the rocket & 100 mls of the water bring to the boil and simmer for 30 minutes, stirring occasionally, add extra water if drying out
  3. Add remaining water, stock concentrate & chickpeas and cook for a further 10 minutes
  4. Turn off the heat and add the rocket and blend with a stick blender or blender
