Apple, Cranberry & Green Tea Loaf

 

apple,-cranberry-&-green-tea-loaf-webA little bit different and a lot delicious.  This Apple, Cranberry & Green Tea Loaf is easy enough to make for lunch boxes and special enough for when friends come over, it’s also jam packed full of nutrients and antioxidants.  I tried it out on some friends and my girls and it got the thumbs up from all.

First up is the regular way to make it or scroll down for the Thermomix version.  It’s a good one to have in your repertoire.

What you need:

1 large apple, grated (any type will do)

125 g butter, melted

150 ml green tea, cooled

1 egg, lightly beaten

180 g wholemeal spelt flour

100 g brown sugar

1 tsp baking powder

1tsp cinnamon

1/2 tsp ground cloves

1/4 tsp nutmeg

75 g dried cranberries

What you do:

  1. Preheat oven to 180 C. Line a loaf tin with baking paper.
  2. Mix together all the dry ingredients, flour, sugar, baking powder and spices in a bowl.
  3. In another bowl mix the melted butter, tea and beaten egg
  4. Tip the wet ingredients into the dry and mix
  5. Add the grated apple and cranberries and stir to combine
  6. Pour into the prepared loaf tin and bake in the oven for 1 hour or until an inserted skewer comes out clean
  7. Cool in the tin for 5 – 10 minutes and then turn out onto a wire cooling rack.

Ingredients

  • 1 large apple, cored (any type will do)
  • 125 g butter, roughly chopped
  • 150 g green tea, cooled
  • 1 egg
  • 180 g wholemeal spelt flour
  • 1 tsp baking powder
  • 100 g brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp nutmeg
  • 75 g dried cranberries

Instructions

  1. Preheat oven to 180 C. Line a loaf tin with baking paper
  2. Grate the apple 6 seconds / speed 5 set aside
  3. Melt butter 3 minutes / 60 degrees / speed 3
  4. Add the tea and the egg and beat together, 4 seconds / speed 4
  5. Add flour, baking powder, sugar and spices and combine 8 seconds / speed 5. Scrape sides.
  6. Add apple and cranberries 10 seconds / reverse / speed 2
  7. Pour into prepared tin and bake for 1 hour or until an inserted skewer comes out clean.
  8. Cool in the tin for 5 - 10 minutes and then turn out onto a wire cooling rack.
