Honey Soy Chicken, Brown Rice & Veggies

I find this meal a winner with the kids and any left overs are great for the lunch boxes the next day – unless the husband finds them and demolishes them off first!

You can buy the chicken already marinated at butchers or supermarkets or a premix marinate but it’s so easy to do yourself.  No reason the whole family can’t enjoy this meal but if the bigger people are after something more substantial you could marinate some chicken breasts with the wings or “niblets” as the ones I get are called!

Honey Soy Chicken, rice & veggies

Ingredients

  • Chicken Niblets, wings, tenderloins or breast - whatever suits your family size
  • 3 Tbsp honey honey
  • 1 Tbsp olive oil
  • 3 Tbsp soy sauce (or tamari if you need gluten free)
  • 1 1/2 C brown rice
  • corn cobs (fresh or frozen)
  • broccoli, peas or any veggies you like

Instructions

  1. Mix honey, olive oil and soy sauce in a small jug
  2. Put chicken in a shallow dish and pour over marinate, cover refrigerate over night of for at least 1 hour
  3. When you are ready to make dinner preheat oven to 180 C and remove chicken from fridge
  4. Prepare rice as per packet instructions
  5. Take cover off the chicken and put in the oven for 35 minutes
  6. Boil a saucepan of water for the veggies or prepare steamer then cook veggies
