Pomegranate Choc Chip Brownies
A random act but I bought a pomegranate the other day and it sat in the fruit bowl for a while until I could work out what to do with it. I had seen something somewhere about a pomegranate brownie – couldn’t ever find that article again but it did prompt a web search for one.
I found this Pomegranate Chocolate Chip Brownie on a website that I think sells bikini’s – so apparently you can eat this and look amazing in a bikini too (Bikini.com). Absolutely no reason not then!
I gave it a go and took to Sunday morning soccer for a taste test (minus the few pieces I had already hoed into), it was a score! Click on the link above to get the original recipe.

I have seen just the seeds sold in the supermarket though which is also an option – they are very good for you, trust me I did an assignment on them!

Ingredients
- 3 Tbs flaxseed / linseed
- 100 g brewed coffee
- 40 g maple syrup
- 45 g olive oil
- 25 g cocoa
- 1 tsp vanilla extract
- 80 g Gluten Free Flour
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 55 g choc chips, divided in half ie 25 g and 25 g
- 55 g pomegranate seeds, divided in half
Instructions
- Preheat oven to 180 C and line a square cake tin with baking paper
- Brew coffee and let it cool a bit
- Mill flaxseed Speed 9 / 5 seconds and then pour in coffee
- Add maple syrup, olive oil and vanilla extract combine speed 4 / 10 seconds
- Add cocoa, flour, sea salt and baking soda and combine speed 4 / reverse / 10 seconds
- Add 1/4 of choc chips and 1/4 pomegranate seeds and mix through with spatula
- Pour into prepared tin and then top with the remaining choc chips and pomegranate
- Bake in the oven for 25 - 30 minutes or until an inserted skewer comes out clean
- Cool in tin completely and once cooled take out of tin using the baking paper and cut into squares
