Spaghetti with grilled chicken & asparagus

Spaghetti with grilled chicken & asparagus is quick, tasty, healthy, flavoursome mid week meal that can be made in 15 minutes.  Really! I can’t claim that my girls eat the asparagus, any chance of that went out the window when they heard that it makes your wee smell but you can swap with green beans if you have the same issue!  The recipe serves 4.  Can be gluten free if you use a GF spaghetti.

I find this is a handy one to have up your sleeve when you need dinner in a hurry and want something on the healthy side.

Here it is cooking away (ok 3 pots may make the cleaning up afterwards longer than 15 minutes but you will have been fed at least!) Recipe is below

Spaghetti with grilled chicken & asparagus

Ingredients

  • 1 packet spaghetti
  • 3 chicken breasts or if you want to cook faster 400g tenderloins
  • Olive oil
  • 1 bunch fresh asparagus (or a big handful of green beans)
  • 1 red capsicum, quartered
  • 1 large handful of baby spinach
  • Dressing
  • 3 Tbs lemon juice
  • 1 Tbs seeded mustard
  • 2 Tbs olive oil
  • 1 Tbs dill leaves

Instructions

  1. Boil the water for the spaghetti and cook as per packet instructions
  2. Heat a grill pan, BBQ or the oven griller, brush the chicken & capsicum with some olive oil and place on the grill. Cook for 2 - 3 minutes
  3. Boil a pan of water for the asparagus and blanch (only needs a minute or 2 until it goes bright green), drain and also place on the grill with the chicken & capsicum. Cook for a further 2 minutes turning the chicken over.
  4. Make the dressing by combining all the ingredients together with a whisk.
  5. When the spaghetti is al dente put the baby spinach in the saucepan and then drain together.
  6. To serve place the spaghetti into serving bowls. Slice the chicken, capsicum and asparagus into bite size pieces and place on top of the spaghetti. Distribute the dressing evenly over the pasta.

      Hi Lucy, thanks so much for stopping by. I love what you are doing for Fabulous Foodie Friday I think it’s Fantastic! I really like this recipe too and asparagus is so good at the moment (I used it as the “soldiers” for boiled eggs the other day that was also really yummy!).
