Speedy Chicken Fried Rice

speedy-chicken-fried-rice-web “Rainbow Rice” is not necessarily the prettiest meal but it’s healthy, nutritious quick and really easy.  It’s a good meal to pull out mid-week as you can use whatever vegies you have lurking in the fridge.  I use brown rice but any rice you like is fine.

This recipe uses Kecap Manis which is a sweet soy sauce but you could replace it with soy sauce if you wanted to.

It makes 4 servings and can be frozen.

Speedy Chicken Fried Rice

Ingredients

  • 2 Tbsp olive oil
  • 200 g chicken breast fillet strips
  • 2 spring onions, finely sliced
  • 1 C frozen peas & corn
  • 1/4 red capsicum, diced
  • 1/2 head broccoli cut into small florets
  • 1 egg lightly beaten
  • 450 g brown rice
  • 2 Tbsp Kecap Manis

Instructions

  1. Cook the rice as per packet instructions or in a rice cooker. As brown rice takes about 35 minutes it could be cooked in advance if you need it to.
  2. Heat the oil in a wok or fry pan over medium high heat. Swirl it around to coat the pan.
  3. Add spring onion and chicken strips. Stir fry for 2 - 3 minutes
  4. Add all the vegies and stir fry for 1 - 2 minutes
  5. Add the egg and stir fry for another minute or until egg is cooked through
  6. Add rice and Kecap Manis and stir fry for 2 - 3 minutes until all heated through
  7. Spoon into bowls and enjoy
