Vegetarian Pasta Sauce – Thermomix

I always have a jar of this on the go in the fridge and have a stash of it put away in the freezer as it’s handy to be able to pull out for those last minute dinner options.  It should keep up to 3 months in the freezer, I use it for gnocchi, meatballs, to add in a bolognaise, or just to go on plain pasta.

Vegetarian Pasta Sauce – Thermomix

Ingredients

  • 1/2 brown onion
  • 2 garlic cloves
  • 40 g olive oil
  • 1 kg tomatoes, halved
  • 3 - 4 sprigs of thyme
  • 3 mushrooms
  • 1 zucchini, roughly chopped
  • 1/2 capsicum
  • 1 carrot, roughly chopped
  • sea salt to taste
  • black pepper to taste
  • 50 g tomato paste
  • water, if a thinner consistency is required

Instructions

  1. Place onions, garlic, tomatoes, oil, thyme, mushrooms, zucchini, capsicum, carrot, salt & pepper in the bowl and blend 1 minute / speed 10. Scrape down the sides of the bowl
  2. Add tomato paste and cook for 30 minutes / Varoma / speed 1 with the MC removed and basket on the mixing bowl lid as it will splash.
  3. Blend the sauce for 8 seconds / speed 10
  4. Add extra water if you want a runnier consistency and cook for a further 5 minutes / Varoma / speed 1
