I love this one pot wonder.  Not only is it tasty but it brings back great memories of my time living in London with my lovely flatmate Janie, she liked this soup.  We had a fabulous flat in Parsons Green, right next to the Sloaney Pony, but it was tiny, you could only have one person in the kitchen at a time so one pot wonders were a necessity!  We did manage to have some great parties there though….

I orginally got this recipe from Marie Claire magazine but don’t have the foodie’s name to credit unfortunately.

White Bean & Chorizo Soup

Ingredients

  • 2 Tbsp olive oil
  • 2 chorizo sausages, sliced (you decide on how hot you want it to be)
  • 2 leeks, thinly sliced
  • 2 garlic cloves, crushed
  • 3 potatoes, peeled and cut into chunks
  • 400 g can cannellini beans, drained & rinsed
  • 1.1 litres stock - I use 1 Tbsp vegetable stock concentrate and a handful of crushed dried porcini mushrooms in boiling water as the stock for extra flavour
  • handful of English spinach, shredded

Instructions

  1. Heat the olive oil in a large pan and cook the chorizo over a high heat until it starts to brown and the red oil starts to be released
  2. Add the leeks, garlic and potatoes and saute for about 3 - 4 minutes.
  3. Add the beans and stock bring to the boil and then simmer with the lid on for about 20 minutes.
  4. Crush a few of the potatoes and beans on the inside of the pan to thicken the soup while it cooks
  5. Add the spinach but only cook it for 1 minute.
  6. Season to taste (may not need anything) and serve with crusty bread.

    Great start to autumn food – even the “I don’t really like soup” eater polished his bowl off and enjoyed it, and 6 year old said it was “amazing”.

      Oh yay! This is one of my faves, our girls won’t go near it though so am chuffed that Evie liked it. x
