Banana Oatcake – Thermomix style

We are getting quite a collection of banana treats on the site but it’s something that goes down well, isn’t it?  So I thought it would be good to have some variations just to mix it up.  Our youngest refuses to eat raw banana but will eat any cake or bake form of it, no point trying to understand child food logic so won’t even go there, she polished off most of this one!  This is another good cake for the lunchboxes or after school snack and also a weekend favourite around these parts!

I found the original recipe of this in the Thermomix Devil of a Cookbook which has some great recipes in it btw.  I have adapted it slightly.  Here you go…

Banana Oatcake – Thermomix style

Ingredients

  • 1 tsp vanilla extract
  • 80 g raw sugar
  • 1/2 stick cinnamon or 1 tsp ground
  • 60 g oats
  • 2 eggs
  • 140 g butter, softened
  • 2 large very ripe bananas
  • 180 g SR flour ( I used Gluten Free)
  • 1 Tbsp coconut oil

Instructions

  1. Preheat oven to 180 C. Line a loaf tin with baking paper.
  2. Put vanilla, sugar, cinnamon and oats into bowl and mill for 20 seconds / speed 9
  3. Add all remaining ingredients and mix for 20 seconds / speed 6.
  4. Pour into prepared tin and bake for 35 - 45 minutes or until an inserted skewer comes out clean
