“Get Well Quick” Chicken, Miso & Broccoli Soup

Is the lurgy lurking around you at the moment?  I had my first ever bout of the flu this year and it knocked me for six, you really wouldn’t wish it on anyone, ever. Given that it’s winter, I thought just in case you were struck by a cold or (hopefully not) the flu you might just need this “Get Well Quick” Chicken, Miso & Broccoli Soup in your life.

My friend Jane reminded me that when we lived together, back in the day, in London, we made a “Miracle” Soup that would get you back on top in no time.  I can’t for the life of me find that exact recipe (it was from a long time ago) but this is the best I could do from memory. I’ve renamed it “Get Well Quick” Soup as it’s not tried and tested as a “miracle” yet but if you are unwell, make this and then suddenly get better please let me know as it may just well earn the title!

It’s power packed full of nutrients and things that are good for you.  Even if you are feeling sick it doesn’t take too much effort to make (or just point a caring person in this direction and ask them to make it for you).

“Get Well Quick” Chicken, Miso & Broccoli Soup

Ingredients

  • 1 Tbsp olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 tsp ground tumeric
  • 1 tsp grated ginger
  • 1/2 C quinoa
  • 1 L chicken stock (chicken bone broth for extra nutrients if you have it) or water
  • 20 g instant organic miso soup powder or 1 Tbsp miso paste
  • 200 g diced chicken breast
  • 1 C broccoli cut into small florets
  • 2 small stems curly kale, leaves only, finely chopped (or silver beet or English spinach)
  • 1 lemon, juice only

Instructions

  1. Heat oil in saucepan and add onions. Saute for 2 minutes, add garlic & tumeric and continue to saute for 1 - 2 minutes until fragrant
  2. Add stock, quinoa, miso powder/paste, ginger and chicken breast and bring to the boil
  3. Simmer for 10 minutes and then add broccoli and kale. Continue cooking for 3 minutes (until broccoli softens slightly)
  4. Remove from the heat, add the lemon juice and stir through
  5. Feel better soon!

      Fighting fit (this was pulled out of the archieves from a while ago). It is a good soup to have up your sleeve.

    YUM!
    I do something very similar, brown rice instead of quiona. There is something about Miso that makes you feel good from the inside out, doesn’t it. My fav.
