Lemon & Coconut Bliss Balls – raw, a little bit tart & a little bit sweet but all so good

I put the call out on Facebook for suggestions as to what to do with our first harvest of lemons.  My friend Angie suggested Lemon & Coconut Bliss Balls so I tried them last night!  They are a nice, lighter alternative to the Raw Cacao, Date & Nut Bliss Balls I often do.

These are our lemons, very proud of them!

Bliss Balls like these are great to have in the fridge or freezer as a quick snack when you are looking for a treat but don’t want anything sugary.  The coconut and almonds are great for you and stave off cravings longer than if you went for a sugar hit.

The original recipe came from a site called Lose Baby Weight I have adapted it slightly and added a Thermomix method.

Ingredients

2 C (160 G) desicated coconut (try to go for organic without preservatives) & extra for rolling

1/2 C (90g) almonds

3 Tbsp Rice Malt Syrup

2 Tbsp coconut oil

1 Tbsp White Chia Seeds

zest & juice of 1 lemon

Method:

Put all the ingredients in the TM bowl 50 seconds / speed 9 or in a blender and blitz for 1 minute.  It should resemble fine breadcrumbs

Spread out the extra coconut onto a small plate

Scoop out small balls of the mix and roll them into the extra coconut and place on a plate or tray and chill in the fridge until they have firmed up.

Makes about 18 balls.  Keep in the fridge in an airtight container for 4 – 5 days or can be frozen for about a month (can be eaten straight from the freezer too!)
