Tortellini with Kale & Walnut Pesto & Peas

This is going to become a winter staple I think.  Cheese tortellini with kale & walnut pesto and peas, it’s a soupy/pasta and it’s delicious.  I came across the original recipe on Annie’s Eats  and thought it would go down well around here – it did!  It’s quick, easy, healthy & yummy.  You can make the pesto ahead (it will keep for 2 – 3 days in the fridge in an airtight container) so that it’s even quicker to make on the night.

You could add variations to it as well by adding extra veggies like broccoli or some shredded chicken if you don’t want the vegetarian option. You can also use any type of tortellini that takes your fancy – I used cheese and spinach tonight.

Ingredients

1 clove garlic

1/4 C (35 g) walnuts

1 1/2  – 2 C (55g) kale leaves only, roughly ripped

1/4 C (35g) olive oil

juice of 1/2 lemon

1/4 C (55g) parmesan

1/2 tsp sea salt

Method

If you are using a Thermomix put garlic, walnuts and parmesan in the bowl and blitz 8 seconds / speed 9 otherwise put in blender and blitz until it looks like breadcrumbs.

Add salt and the kale and chop 5 seconds / speed 6 or in the blender until finely chopped

Add oil and lemon juice and combine all together 5 seconds / speed4 or in blender pulse until combined

It can be used as a dip or a spread too.  Makes about 1 cup

Tortellini with Kale & Walnut Pesto & Peas

Ingredients

  • 1 Tbsp olive oil
  • 1 onion finely chopped
  • 1 big clove garlic, crushed
  • 1/4 tsp chilli flakes
  • 6 C vegetable broth or 1 Tbsp vegetable stock concentrate and 6 C water
  • 1 packet cheese tortellini ( I used a a 625g packet which was enough for the 4 of us)
  • 2 C frozen peas

Instructions

  1. In a large saucepan heat the oil. Add the onion and saute until soft then add the garlic and chilli flakes and cook for about 30 seconds.
  2. Add the broth or stock & water and bring to the boil.
  3. Add the tortellini and cook to packet instructions. Add the peas at the end for the last 2 minutes or so.
  4. Remove from the heat and stir in the pesto
  5. Season to taste

    I love me a pea pasta… adds such a sweetness doesn’t it. I’ve done lots of pesto’s in my day but hadn’t thought of walnuts, great idea hun!
