Bacon, Cheese & Spinach Scones (Gluten Free if you want them to be & no eggs!)

I tested these out on the girls in the school holidays and they went down a treat, Bacon,Cheese & Spinach Scones.  These are great for anytime of the day but I made them with the school lunch boxes in mind as an alternative to sandwiches which the girls are very anti at the moment.

My batch was using gluten free SR Flour but you can replace that with normal SR flour if you don’t have any gluten issues.  There are no eggs in this recipe so a good one then for egg allergy sufferers.

Let’s get into it then.  Recipe makes 16 and I’ve put both a conventional (just here) and Thermomix method (with photo’s) down below.

Bacon, Cheese & Silverbeet Scones (Gluten Free if you want them to be & no eggs!)

Ingredients

  • 2 C ( 250 g) SR Flour I used Gluten Free
  • 1/4 tsp sea salt
  • 2 Tbsp butter (room temperature)
  • 5 slices of short cut bacon, diced
  • 1 C (160 g) tasty cheese, grated
  • 1/2 C (6) silverbeet leaves, finely chopped (optional)
  • 3/4 C (170 g) milk

Instructions

  1. Preheat the oven to 200 C and line a baking tray with baking paper
  2. Sift the flour and salt into a bowl and then using your finger tips rub in the butter
  3. Add the bacon, cheese and silver beet and combine.
  4. Add the milk and gently stir through until a dough has formed
  5. Knead the dough on a lightly floured work bench and pat it or roll it out until it's about 2 cm thick
  6. Using a scone cutter, cut out the scones (if it's getting sticky dip it in some flour). Place the scones onto the baking tray making sure that they are touching
  7. Brush some milk over the top and bake in the oven for 20 - 25 minutes

For the Thermomix

Ingredients

160 g Tasty cheese, cubed

5 slices short back bacon

6 silver beet leaves only (optional)

250 g SR Flour (I used gluten free)

1/4 tsp salt

2 Tbsp butter, room temperature

170 g milk

Method

Preheat the oven to 200 C and line a baking tray with baking paper

Grate cheese Speed 8  / 10 seconds. Set aside

Put silver beet & bacon into the bowl to chop  Speed 5 / 4 seconds. Set aside with cheese

Put flour, butter and salt into the bowl and mix Speed 6 / 5 seconds

Add the cheese, bacon & spinach back into the bowl and add the milk.  Mix Speed 5 / 10 seconds / Reverse

Sprinkle the work bench or pastry mat with a little bit of flour, take out the pastry and form it into a large ball and then flatten by hand or with a rolling pin until it’s about 2cm thick

Using a scone cutter, cut out the scones (if it’s getting sticky dip it in some flour). Place the scones onto the baking tray making sure that they are touching

    Thanks for the recipe! They were delicious. Mine rose in the oven and then flattened for some reason but they still tasted great.
