Baked Trout & Vege – healthy, quick and dinner done

I’m so excited (well that may be a bit extreme) pleased perhaps that a new fish monger has arrived in our ‘hood, right next to the brand new supermarket that has also opened.  Big news here in the burbs but anyway as I was checking it out I thought that as a change from our usual salmon I’d get us some trout for dinner.  I usually get a piece each for GT and I and then just one for the girls to share as they are not massive eaters (understatement!) and that keeps the cost down a bit too.

Anyways, this is a very simple, extremely healthy and so quick dinner that can be made in about 30 minutes.  Your choice of vegies (salad also would be great) but I used:

3 trout fillets (skin on is cheaper)

1 sweet potato, peeled and cut into wedges

1/2 head broccoli cut into florets

2 handfuls of green beans, topped and tailed

1 bunch asparagus

Just preheat the oven to 180 C and line 2 baking trays with baking paper (means less washing up afterwards).

Cut up your sweet potatoes into wedges and potatoes if using, drizzle with some olive oil and put them in the oven on the first tray and bake for about 30 minutes.

After 15 minutes put your fish portions on the other tray and drizzle with olive oil and a squeeze of lemon and cook for 15 minutes

Meanwhile steam or boil your greens until just tender.

That’s it!

Plate up and enjoy!

    Yum – I love trout. I think it is my favourite fish. I have a smoked trout in the fridge at the moment, which reminds me to get cracking on a lovely little lunch recipe that I want to blog about!
