Pea, Zucchini, Lemon & Mint Buckwheat Pasta

You know those Monday’s when you’ve really over indulged on the weekend, a bbq here and bacon and egg burger after Nippers there and maybe a sausage sizzle as well?  Yeah well on those Mondays sometimes meat free is the way to go, this recipe is also gluten free too.  Super quick, super easy this can be eaten hot as a dinner or as a cold salad for lunch the next day if there are any left overs.  This took less than 30 minutes to make and be on the table and doesn’t require any particular skill either – happy days!

Pea, Zucchini, Lemon & Mint Buckwheat Pasta

Ingredients

  • 500 g packet buckwheat pasta (or whatever pasta you like)
  • 1/4 C (60ml) olive oil
  • 2 garlic cloves crushed
  • 2 large zucchini's, grated
  • 1 C peas
  • 1/4 C (180g) ricotta cheese
  • 1 C fresh mint, finely chopped
  • 1/2 C (70g) slivered almonds
  • 2 Tbsp lemon juice

Instructions

  1. Boil water for pasta and then cook following packet instructions
  2. Heat oil in a frying pan and cook the garlic and zucchini until they start to soften (about 2 minutes)
  3. Add the peas to the boiling pasta for the last 3 minutes of the cooking time. Drain and put into a big serving bowl
  4. Add the garlic & zucchini to the pasta & peas and then add the ricotta, lemon juice, mint and almonds, season to taste and mix everything together and then serve.
  5. If you didn't want to do the chopping and grating by hand you could use the Thermomix like this;

  7. Do pasta & peas in the same way but chop the mint Speed 5 / 4 seconds, set aside.
  8. Put the garlic cloves into the TM and crush Speed 8 / 3 seconds
  9. Add the zucchini Speed 5 / 8 seconds add oil and cook 3 minutes / Varoma / speed 1
  10. Tip out of the TM and add to the pasta & peas and then add all the remaining ingredients, mix and serve

    That sounds delicious, I love most mint and pea combos and this one sounds easy which is also another of my favourite things when cooking.
