Thai Lamb Stir Fry – dinner done in under 30 minutes

I love the warmer months, we eat outside, the meals a lighter and everything is a bit more laid back except the girls spied the chilli in this dinner and completely arked up without even tasting it.  So once the chilli, which wasn’t hot by the way, was picked out we got on with the meal, not feeling quite so laid back at this point.  Despite that this is a really quick, easy and yummy dinner that can be made in under 30 minutes, chilli optional!

Thai Lamb Stir Fry – dinner done in under 30 minutes

Ingredients

  • 200 g thick rice noodles
  • 2 Tbsp peanut oil
  • 500 g lamb strips
  • 1 Tbsp finely chopped lemongrass
  • 1/2 fresh long chilli, thinly sliced
  • 2 cloves garlic, crushed
  • 1 large brown onion, thinly sliced
  • 2 handfuls of green beans
  • 1/2 C sweet chilli sauce
  • 2 Tbsp fish sauce
  • 1/4 C chicken stock
  • 1/4 C mint leaves
  • 1/4 C salted peanuts

Instructions

  1. Put noodles in a large heatproof bowl, cover with boiling water and stand until just tender. Drain
  2. Heat half the oil in a wok and stir fry the lamb until browned all over
  3. Add the rest of the oil and lemon grass, chilli, garlic and onion and stir for about 1 minute. Add the beans and stir fry for another minute or so until tender.
  4. Add sauces, stock and noodles and mix through.
  5. Remove from heat, add the mint leaves and toss
  6. Plate up immediately and sprinkle with the peanuts
