Blueberry Summer Salad – Simple, Seasonal & Sensational

Beautiful, juicy blueberries are in abundance at the moment and for about the one week of the year CHEEEAP!  So a good time to experiment with them I thought and voila, “Blueberry, Walnut, Goats Cheese Summer Salad”.  Quick, simple, seasonal and I think, a taste sensation.  A crowd pleaser (well GT raved about it so that’s a good sign) and something a bit different when asked to “bring a salad”!

The quantities in this recipe are for a salad to feed 2 as a meal so just add more for however many you are feeding.  I think this would be perfect for a light “ladies lunch” as well, perhaps it’s time I organised one, hmmm!

So here it is Blueberry Summer Salad…

Blueberry Summer Salad

Ingredients

  • 3 C salad leaves (I used baby spinach but a mix would also be nice)
  • 3 /4 punnet blueberries
  • 3/4 C grape (or cherry) tomatoes
  • 1/4 C chopped walnuts (pecans also go nicely)
  • 1/2 C crumbled goats cheese
  • For the dressing
  • 1 Tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey

Instructions

  1. Distribute the salad ingredients evenly into serving bowls and toss to combine
  2. Whisk dressing ingredients together, using a whisk or fork, and drizzle over the top of the salads.
  3. Enjoy!

    I want fresh blueberries in France!!! It’s not fair… Your salad seems yummy, i could try with erhhh oranges!
    Winter fruits here… not so fun!

      Ha ha. I will be envious when it’s your summer don’t worry. I think it would also be yummy with figs wrapped in prosciutto????

    I never thought to put blueberries in a salad but these flavours seem to go together really well.

    Oh yum! I love it when fresh blueberries are cheap and always grab a punnet or two! I usually just eat them as they are but I am keen to try this salad!

      I just got a punnet of the most super sized blueberries today so am going to make this salad again too.
