Date & Banana Bread (Regular & Thermomix) great for the lunch box

As I’ve mentioned before my fussy Miss 6, who is now quite toothless, hates bananas but loves banana bread which is random kid logic for you.  More to amuse myself than anything, because the care factor from my kids is really very low, I keep trying different variations of banana bread/loaf/cake whatever you want to call it. (It’s really cake but I won’t tell if you don’t want me to).  This one with dates, that were undetected, was met with the critics approval and is great for lunch boxes, morning tea or to assist with getting through the homework!

Time Saver Tip: slice and individually wrap slices and freeze for up to 3 months so when you need a quick snack it’s ready and waiting

As usual first up is the regular method and scroll on for the Thermomix one:

What you need:

125 g butter (room temp)

1 C brown sugar

2 eggs

4 bananas

6 dates, seed and chopped quite small

1 tsp vanilla extract

1 3/4 C plain flour (I used a gluten free one)

1 1/2 tsp bicarb soda

What you do:

Preheat oven to 170 C and line a loaf tin with baking paper (9 x 25cm is a good size)

Beat the butter and sugar together in an electric mixer until pale and creamy.

Add the eggs, one at a time beating in between.

Add the banana, dates and vanilla and beat until combined and fairly smooth

Stir in flour and bicarb soda

Pour into the prepared tin and bake for 1 hour 10 minutes or until an inserted skewer comes out clean.  Cool in the pan for 5 minutes and then turn out and cool on a wire cooling rack.

Date & Banana Bread - Thermomix

Ingredients

  • 125 g butter, room temp
  • 140 g brown sugar
  • 2 eggs
  • 4 ripe bananas
  • 6 dates, seeded
  • 1 tsp vanilla extract
  • 200 g plain flour (I used a gluten free one)
  • 1 1/2 tsp bicarb soda

Instructions

  1. Preheat the oven to 170 C and line a loaf pan with baking paper (9 x 25cm is a good size)
  2. Put butter and sugar into bowl and beat speed 5 / 15 seconds. Scrape sides
  3. Add eggs and combine speed 5 / 2 seconds then add banana, dates and vanilla speed 7 / 5 seconds
  4. Add flour and bicarb soda and combine Speed 5 / reverse / 3 seconds
  5. Pour into prepared pan and bake in the oven for 1 hour 10 minutes or until an inserted skewer comes out clean
  6. Cool in the tin for 5 minutes and then turn out onto a wire cooling rack to cool.
  7. Enjoy!

    I’m having quite the love affair with dates lately, Vicki, so this will be pinned for an afternoon tea soonest. The kids claim to loathe them, but that doesn’t seem to stop them from munching through muffins and loaves!! x
