It’s that time of the month again when I link in with Fig Jam & Lime Cordials “In My Kitchen” round up.  There has been quite a lot of activity in the BE&S kitchen. I’ve been focussing a lot on quick & easy dinners this month as I launched a new series on my blog called “Quick, What’s for Dinner Tonight?” It’s a weekly linky party for meals that can be made in 30 minutes or under that the whole family can enjoy. For no particular reason zucchini’s have been featuring a lot in my kitchen this month – my girls favourite way to have them is in these Chocolate Zucchini Muffins which are great for the lunch boxes too.

I am apparently late to the party on the Overnight Oats front but now am a complete convert.  Do you make them?

There have been a lot of Hot Cross Buns in my kitchen this month as they are a real favourite (of mine).  I was delighted when they appeared in the shops but then I though I really should make my own, so I did.  Much easier than I thought they would be.  Do you make them?

The girls wanted to get in on the Easter baking act ….

so we made these super easy “Easter Baskets”.  I found the chocolate praline quail eggs in the local fruit & vege shop – delicious!  Then, following the trend for putting cupcakes in ice cream cones we tried it out and made these Easter Cone Cupcakes for the school bake sale, after taste testing at home first, of course!

I discovered Pana Chocolates which are in a word “divine” and so many unusual flavours, raw, organic and Australian made (I’m not sponsored to say that I just loved them!).  I hosted our book club this month and got a few bars of it for the ladies but was also gifted by a friend this box which I kept to myself as my Easter treat!  Sssh, don’t tell. Yum!

I also discovered Matcha this month, do you know it or am I late to the party again? It’s  a green tea powder high in anti-oxidents apparently.  I made a green smoothie in honour of St Patricks Day with it and am now on the hunt for other uses too.  Got any to share?

So as you can see quite an eclectic mix of things in my kitchen this month.

    Oh hello… happy April. I’ll try and visit for the 30 minute meals if I can. I love zucchinis. That lamb and zucchini pasta sounds like a great idea.

    So much deliciousness in your kitchen this month! I love those Cone Cupcakes – so cute! I made my own HCBs this year and my only regret, is that I wish I’d done it before, so easy and so yummy! Loving the link up too – so many winner dinners! Now I’m off to track down some Pana Chocolate!

    Your girls had a great time this month in the kitchen with you. I bet the cone cupcakes sold quickly at school. I’m all over the overnight oats too – we eat them every day to be honest. I make a batch on Sunday and another on Wednesday and what’s left at the weekend goes into a smoothie. Easiest start to the day ever! Have you eaten the fig & wild orange chocolate yet?!

    Those choc muffins looks great — zucchini ones? Really? Texture looks so good. Will bookmark!
    I love matcha, is also very good for you, the L-theanine (amino acids) are good for mental alertness.

    What a great idea to put cupckaes in ice cream cones! I have some matcha bu haven’t used it yet, was it terribly strong? I love matcha ice cream and got it to use in a recipe that, now, I can’t find.
