Poached Chicken Omelette, quick, healthy, protein packed

Omelettes….quick, healthy and protein packed for breakfast, lunch or dinner.  If you’ve got eggs you can make an omelette can’t you?  This one is a little bit fancy, I had it for lunch the other day but was thinking at the time it would be a great Sunday night dinner, it’s full of flavour and a good way of using up leftovers too.

Now if you haven’t poached chicken before don’t fear, it’s beyond easy.  Boil up some water in a saucepan, put the whole chicken breast in and reduce the heat to a simmer and poach for about 12 – 15 minutes.  Done!  See, easy!  When I made this omelette I actually used chicken stir fry strips as I had some in the fridge so they only took about 7 minutes to poach.  Let the chicken cool and then shred with a fork or for speed and ease whack it in the Thermomix or blender and give it a blitz.

Any leftover chicken could be used for lunch the next day in a sandwich, wrap or pitta pocket or another omelette!  Whatever, go for it.

Ok there is only so much you can say about an omelette so here is the recipe (it’s for 1 so just increase quantities by however many you are cooking for).

Poached Chicken Omelette

6 minutes

Serves 1 so just increase quantities by the number of servings you need

Ingredients

  • 100 g shredded poached chicken breast
  • 2 eggs
  • 1 tsp tamari or soy sauce
  • 1 tsp water
  • 1/2 carrot cut into thin slices
  • 1/2 celery stick cut into thin slices
  • 1/2 small red capsicum, cut into thin slices
  • 1/4 C Coriander leaves
  • 1 spring onion, thinly sliced
  • butter or oil for the fry pan
  • For Drizzle Sauce
  • 2 tsp tamari or soy sauce
  • 2 tsp red wine vinegar
  • 1 small red chilli, seeded and thinly sliced (optional)

Instructions

  1. Make the dipping sauce by whisking all te 3 (or 2 ) ingredients together then set aside.
  2. Whisk the eggs with the tamari or soy sauce and 1 tsp water
  3. Heat a fry pan and melt butter or coat with oil then pour in the egg mix and swirl around to cover the bottom of the pan. Turn down the heat and put the chicken, vegies and coriander leaves on one side.
  4. Once the egg has cooked through fold the empty half of the omelette over the top and turn out onto a plate.
  5. Serve with a drizzle with the sauce
