Quick, What’s for Dinner Tonight? Link Up # 7

I’ve got a rather tasty Poached Chicken Omelette for my contribution this week but I was especially taken last week with Plus Ate Six’s “Tagliata“. Given that Nancy lives in Shanghai she managed to find some pretty good looking Australian steak for it. There is all sorts of interesting deliciousness and pretty things on her blog too, why not pop over and check it out.

I’m bringing you eggs this week with my Poached Chicken Omelette. High protein, big taste, easy to make!
If you’ve got eggs you can make an omelette, right? This one is a little bit fancy, I had it for lunch the other day but was thinking at the time it would be a great Sunday night dinner, it’s full of flavour and a good way of using up leftovers too.
Now if you haven’t poached chicken before don’t fear, it’s beyond easy. Boil up some water in a saucepan, put the whole chicken breast in and reduce the heat to a simmer and poach for about 12 – 15 minutes. Done! See, easy! When I made this omelette I actually used chicken stir fry strips as I had some in the fridge so they only took 7 minutes to poach. Let the chicken cool and then shred with a fork or for speed and ease whack it in the Thermomix or blender and give it a blitz. You can poach the chicken ahead of time and it will keep in the fridge for a couple of days
Ok there is only so much you can say about an omelette so here is the recipe (it’s for one so just increase the quantities by however many you are cooking for). If you’ve got fussy kids (duh, yes!) then just pick and choose the toppings to suit.

Any leftover chicken could be used for lunch the next day in a sandwich, wrap or pitta pocket or another omelette! Whatever, go for it.
This wrap has the left over chicken, some baby spinach and avocado pesto – lunch done in under a minute!

Good question! – I think it’s that you bake the frittata at the end in the oven and make it more into a crustless quiche. Both are good in my book! (BTW I posted a frittata recipe yesterday in my post on sauces). Your holiday looks lovely too. x

Vicki your omelette looks terrific, I especially love the fact that there’s no cheese in there, Zadada and I are trying to eat slightly cleaner lower carb mains and this little treasure of your fits the bill perfectly. Speaking of low carb I’m making your Warm Lamb and cauliflower salad tomorrow night.
