Rosemary & Prosciutto Chicken Drumsticks with Creamy Brown Rice

Just in case you missed seeing these in our first “Your Weekly Feed” link up I thought they deserved a post of their own as they are a very easy way of tarting up chicken drumsticks and a perfect mid week meal or an “early dinner with friends” kind of meal.  Rosemary & Prosciutto Chicken Drumsticks with Creamy Brown Rice is pretty quick, pretty healthy and pretty easy on the budget too.  They just come with a warning that if you are 6 and lost your 2 front teeth eating them off the bone is a bit tricky!

Rosemary Chicken Drumsticks with Creamy Brown Rice

Ingredients

  • 8 fresh rosemary stalks
  • 8 chicken drumsticks
  • 8 slices of prosciutto
  • 1 C brown rice (or whatever rice you like, or pasta)
  • 1 Tbsp olive oil
  • 1 brown onion finely chopped
  • 1 garlic clove, crushed
  • 1/2 head cauliflower, finely chopped
  • 1/2 head broccoli, finely chopped
  • 300 ml cream
  • 1/4 tsp dried chilli flakes (optional)
  • 250 g cherry tomatoes (halved)
  • 1 Tbsp fresh thyme leaves

Instructions

  1. Preheat the grill in the oven (250 C) Line a baking tray with baking paper and then put on the grill rack.
  2. Cook the rice as per packet instructions as brown rice can take up to 40 minutes to cook
  3. Put one sprig of rosemary on each of the drumsticks and wrap with the prosciutto.
  4. Put the drumsticks on the grill tray and cook under the grill for 5 minutes, turn over and cook for a further 5 minutes on the other side. cover the chicken with foil and then bake in the oven on 180 C for 25 - 30 minutes.
  5. With 5 minutes to go for the rice to cook add the cauliflower and broccoli to the pot or rice cooker and then drain once cooked
  6. In a frypan heat the oil saute the onion and garlic until the onion is translucent. Add the cream and chilli (if using) and simmer until it begins to thicken.
  7. Add the rice, broccoli & cauliflower to the cream with the tomatoes and half the thyme, cook stirring through until the tomatoes are soft.
  8. Put the rice mix in bowls and top with the chicken, sprinkle with the remaining thyme.

    These flavours look delicious. I made a citrus chicken drumstick a couple of weeks ago and they were a hit in my house so I should give these a go.
