Pea, Pancetta & Lemon Spaghetti – from pan to plate in 15 minutes

Pea, Pancetta & Lemon Spaghetti – from pan to plate in 15 minutes! This is a quick and easy mid week meal that the whole family can enjoy.  I served it up to the critics to test it out as a recipe for “Your Weekly Feed” and, unlike most nights, there were no complaints!  Happy days, especially as the girls had been off peas for about 2 years – I now find them eating them straight out of the freezer!!!!

In keeping with the quick & easy theme shall we jump straight into the recipe?

Pea, Pancetta & Lemon Spaghetti

Ingredients

  • 6 slices of pancetta (or bacon will do just fine)
  • 250 g - 500g packet of spaghetti depending on family size - I used a gluten free spaghetti
  • 1 lemon, juice & zest
  • 1 C frozen peas
  • 1 Tbsp olive oil
  • salt & pepper to taste
  • 1/2 C grated parmesan

Instructions

  1. Boil water for spaghetti and cook as per packet instructions
  2. As the water is boiling grill of fry the pancetta until crispy
  3. Combine lemon juice, zest, olive oil and salt & pepper in a jug
  4. Add the peas to the spaghetti water with 3 minutes of cooking time to go
  5. Break the pancetta up into small pieces
  6. Drain spaghetti & peas and put back in the saucepan. Pour in the juice combo and toss through the pancetta so all combined.
  7. Plate up into bowls, season to taste and top with grated parmesan

This is a regular go to in our house especially on those nights where we are late due to the after school run around & need something simple & quick – you know how it goes!

    Yep, this would definitely work at our place! Just minus the pancetta for me, but I’m sure it could be easily replaced with some other delicious thing, so no problems there! Dinner ready in 15 minutes flat sounds mighty fine to me, especially if peas and lemon are involved – they’re such a good combo!
