Layered Chia Breakfast Bowl

I’ve been hooked on Chia Pots for breakfast for a while now – I make them the night before (surprisingly quick & easy) and then breakfast is ready and waiting in the morning, for me anyway, the girls are still a bit wary. I had being doing the same Vanilla, Cinnamon Chia Pods for ages which I love but in the holidays when we didn’t have to rush out the door I set to experimenting as a way of enticing the girls to try them.  This delicious Layered Chia Breakfast Bowl was the result, sooo good if I do say so myself!  Super healthy, filling and so very yummy, do you want anything else to start your day?  Tea and/or coffee are a given of course!  It’s like having a cafe (hipster style) breakfast at home!

So how do you make this pretty little pot?  I use the same recipe as usual for the chia part;

1 C almond milk (or whatever milk of your choice)
1 Tsp vanilla powder or vanilla extract
2 Tbsp honey
1/4 C Chia Seeds
1/2 tsp cinnamon

Pour milk into a medium sized bowl.
Add chia seeds and stir well.
Add vanilla, honey and cinnamon, and stir for a couple of minutes to make sure everything is mixed through.
Let it sit then for about 5 minutes, so the chia seeds start the swelling process.
Pour mixture evenly into 3 3/4 – 1 C capacity jars, (each jar will end up with about 1/2 C of the chia mixture once it has swollen and set).
Let jars sit several hours or overnight in the fridge before eating.

Fruit Smoothie

Ingredients

  • 1 banana, peeled & chopped
  • 1/2 C (60g) fresh or frozen raspberries
  • 1/4 tsp fresh lime zest
  • 1 Tbsp lemon juice
  • 1/2 C (175g) greek yoghurt
  • 2 Tbsp (25g) honey
  • 2 ice cubes

Instructions

  1. Put all the ingredients in a blender and whizz until smooth if you are using a Thermomix gradually go from 3 - 7 over 10 seconds.

Top with some granola (my refined sugar free recipe) and more berries take a photo, Instagram it, ha ha and then mix it all together and eat!

(Disclaimer: The girls still refused the chia part but loved the Fruit Smoothie so half a win and the Smoothie itself is still a great pink start to the day for them).

    I went on a real run of chia for breakfast and then fell off the wagon. I should give it another go I think, they were always so yummy!

      I’m on and off the chia wagon too but I really, really like them and always crave one the mornings there aren’t any!

    This is really on my list but the price of chia is incredibly high!!! How much do you pay for them in AUstralia? I still pint this pretty breakfast or snack! xx cathy

      They are expensive here too but a little goes a long way – anyway a parcel of some special things in coming to you soon and you just never know what might be inside! x
