Honey Butter Loaf – a pantry staples cake

We got back from a few days away last week and I had nothing for the girls lunch boxes the next day, as I’ve started to clear out the freezer ahead of the “big move” there was nothing there either. That left making a cake from pantry staples and this Honey Butter Loaf was created.  Not necessarily the prettiest but it’s lovely, sweet and buttery and went down a treat in the lunch boxes too.

Regular method up first and then the Thermomix version.

What you need:

100 g butter

1/2 C honey

1/2 C milk

2 eggs

2 tsp vanilla extract

2 C SR Flour (I used Gluten Free)

1/4 tsp bicarb soda

1/4 C brown sugar

What you do:

Preheat the oven to 160 C and line a loaf tin with baking paper.

Melt the butter in a saucepan until it’s bubbling.

In a large bowl put the honey, milk, eggs and vanilla and add the butter.  Whisk until smooth.

Add the flour, bicarb soda and sugar and stir to combine.

Pour into the prepared loaf tin and bake in the oven for 50 – 55 minutes or until golden brown and an inserted skewer comes out clean.

Cool in the tin for 5 minutes and then cool on a cooling rack until completely cool.

Enjoy with lashings of butter.

Honey Butter Loaf – Thermomix method

Ingredients

  • 100g butter
  • 120 g honey
  • 125 g milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 260 SR flour
  • 1/4 tsp bicarb soda
  • 40 g brown sugar

Instructions

  1. Preheat the oven to 160 C and line a loaf tin with baking paper
  2. Melt butter on 90 / speed 2 / 5 minutes
  3. Add honey, milk, eggs & vanilla and combine Speed 5 / 6 seconds
  4. Add the SR flour, bicarb and sugar and combine Speed 3 / Reverse / 5 seconds
  5. Pour into the prepared tin and bake in the oven for 50 - 55 minutes or until golden and an inserted skewer comes out clean.
  6. Cool in the tin for 5 minutes then turn our and cool completely on a cooling rack.
  7. Enjoy with lashings of butter.

    Ooh this looks like a great way to use up some of those pantry staples! My go to cake is a bit naughty, it’s my Great Nan’s choccie cake as it’s so easy to make and the kids love it!

    I have many and recently I can’t stop making loaves! Loaves are fab! I’ll add this one to my repertoire. I’ve got my all-time favourite date loaf going up on the blog on Thursday and then I’ll probably have a different one up next week. They are so easy to make. x

    I’m always on the lookout for new additions to Miss T’s school lunchbox – thank you! The fact I have all of this in the pantry already is an added bonus. Nothing’s worse than having to “duck out” to the shops for one missing ingredient. My pantry staple is raspberry muffins as I always have a large pack of frozen raspberries in the freezer (Mr TT – age 3 – eats them like lollies!).
