Lemon, Ricotta, Yoghurt & Chia Muffins = Lunch Box Favourites

I’m always on the hunt for new recipes for the lunch boxes, I honestly think the girls would be happy eating the same thing day in day out so I think I look for variety for my benefit and well, of course, yours!  I happen to have chia seeds and lemons coming out of my ears at the moment so I was looking for something that I could use both in and ended up with these Lemon, Ricotta, Yoghurt & Chia Muffins.  We took them to soccer for taste testing and they got the the thumbs up from the team as well!

You have to love a one bowl recipe don’t you?  This one is adapted from a Donna Hay recipe (found in the 2015 Winter Donna Hay Magazine) however I have reduced the sugar and haven’t used icing.

Lemon, Ricotta, Yoghurt Chia Muffins

Ingredients

  • 2 1/2 C SR Flour
  • 1/2 C raw caster sugar
  • 2 Tbsp finely grated lemon rind
  • 1/3 C black chia seeds
  • 1 C ricotta
  • 2 eggs lightly beaten
  • 2 tsp vanilla extract
  • 1 C greek yoghurt
  • 1/2 C olive oil

Instructions

  1. Preheat the oven to 180 C and line a 12 hole muffin tray with patty cases
  2. Put the flour, sugar, lemon rind and chia seeds in a large bowl and mix to combine.
  3. Add in the egg, ricotta, yoghurt, vanilla & oil and gently stir through
  4. Spoon into the muffin tins and cook for 20 - 25 minutes or until an inserted skewer comes out clean.
  5. Cool in the tray for a couple of minutes and then cool completely on a wire cooling rack

    My girls would love these in their lunchbox, I might try and whip a batch together next week, especially since it’s only one bowl! Winning! Was great to meet you, even though briefly 🙂

    I love everything listed in this title! I also have a neighbour with a very healthy lemon tree so shall pop over and grab some lemons. YUM!
