I recently discovered a magazine in the supermarket called “Eat Well” looks like it’s fairly new but as I like to “eat well” & have a bit of a magazine addition (slight understatement) I bought a copy (this is not sponsored I just liked the magazine).  I was inspired to make these Cinnamon & Coconut Sugar Muffins after seeing a very similar recipe in the mag.  The magazine took them a little bit further and had pink cream cheese icing on top which would be delicious but I wanted these for the lunch boxes and was worried about how icing would go in the heat up here!!!  I’ve also adapted the recipe for the Thermomix and used gluten free flour so I’ve pretty much covered all bases I think!

I like that these are refined cane sugar free & really easy to make not to mention yummy!! Recipe makes 8 muffins

Cinnamon & Coconut sugar Muffins

Regular method first followed by Thermomix

What you need:

1 1/4 C plain flour (I used GF)

4 Tbsp coconut sugar

2 tsp baking powder

1/2 tsp salt

1 large egg

1 tsp vanilla extract

100g melted butter, cooled

1/2 C milk

2 Tbsp coconut sugar (don’t use until the end)

1 Tbsp ground cinnamon (”  “)

What you do:

Preheat oven to 180 degrees and line 8 holes of a muffin/cupcake tin.

In a large bowl combine the dry ingredients except the extra 2 Tbsp of coconut sugar and cinnamon

In another bowl whisk together the cooled melted butter, milk, egg and vanilla.

Make a well in the dry ingredients and pour in the wet and stir to combine

Mix the extra coconut sugar and cinnamon together and then sprinkle over the muffin batter and swirl through

Scoop into the prepared muffin tin and then bake in the oven for 18 – 20 minutes

Remove from oven and cool on a wire rack.

Enjoy!

Ingredients

  • 100g butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 110 g milk
  • 170 g plain flour (I used GF)
  • 40 g coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 20 g coconut sugar (don't use until the end)
  • 1 Tbsp ground cinnamon (" " )

Instructions

  1. Preheat the oven to 180 degrees and line or grease 8 holes in a muffin/cupcake tin
  2. Melt the butter in the Thermomix 2 minutes/ 80 degrees/ speed 3 allow to cool a bit
  3. Add milk, egg & vanilla and combine Speed 5 / 4 seconds
  4. Add flour, coconut sugar, baking powder and salt and combine Reverse / Speed 4 / 4 seconds. Scrape sides
  5. Add the extra coconut sugar & cinnamon and swirl through. Reverse / Speed 3 / 2 seconds
  6. Scoop into prepared muffin tin and bake in the oven for 18 - 20 minutes
  7. Remove and cool on wire rack
  8. Enjoy

    I’ve got some coconut sugar in the cupboard that needs using up and I think I know just how I’ll use it now! Thanks for the inspo! Because these are so healthy and delicious, I guess you can eat more of them, right?!

      I forget to use it but it does add a nice flavour so I’m going to use it more often now. x

    OOh, I’ll have to look out for that new mag hun! I’m addicted to Super Food Ideas, it’s such a good source of inspiration and it’s just so inexpenssive.
    I hope all is going ok with the build and it doesn’t take too long to fix all that wiring (oops).

    Just made these, without a thermomix. They turned out fabulous! I did have to bake them a bit longer than suggested. These are oh so yummy! I am about to make more with raisins. Mmmmm.

      That’s a good addition. I think my oven runs hot so I’ll test the timing again on them. I’s so glad you like them.
