Tracey’s Gluten Free Florentines

Florentines - a gluten free treat

Good things have been happening up in the sunny north.  I have found a kindred spirit in the kitchen department and when she brought her florentines over she became a friend for life!  Florentines have long been a favourite sweet treat of mine but I have never made them, have you?

I did ask the lovely Tracey to share the recipe as they are so good and now there is no excuse not to make them (they are definitely achievable & a crowd pleaser). Up here they need to be kept in the fridge but they didn’t last very long regardless as I inhaled them, yes, yes I did!  Thank you to Tracey for sharing your yummy Gluten Free Florentines.

Tracey’s Gluten Free Florentines

Ingredients

  • ¾ cup sultanas
  • 1 cup flaked almonds
  • ¾ cup shredded coconut
  • ½ cup halved glace cherries
  • 2 cups crushed GF corn flakes
  • ¾ cup nestle Sweetened Condensed Milk
  • 200g dark, milk or white choc melts

Instructions

  1. Preheat oven to 160 degrees.
  2. In a bowl combine all ingredients except chocolate.
  3. Place spoonfuls of mixture onto baking paper lined oven trays.
  4. Bake 15 minutes or until light golden.
  5. Cool slightly before removing from the tray.
  6. Cool on a wire rack.
  7. Melt the chocolate and then spoon into small clip seal bag and seal
  8. Snip a tiny piece off the corner and drizzle cooled Florentines with chocolate.
  9. Refrigerate to cool.

      I had forgotten how much I love them, now I’ve been reminded I’m going to be making them all the time!
