Lemon Macadamia Biscuits

It’s been a while since I’ve made bickies but these were worth the wait, Lemon Macadamia Cookies, yum if I do say so myself!

We had these on the weekend (the school is nut free so no good for the lunch boxes but so good for afternoon tea!) and they went down a treat even with the fussy one.  They are quick and easy to make, a zesty, nutty bite of deliciousness.

I went hunting for a recipe to follow and then adapted it for the Thermomix.  The regular recipe method was inspired by this one. (Scroll down for the Thermomix method). It makes 10 – 12 depending on how big you make them and they can be stored in an airtight container for 2 – 3 days (if they don’t get wolfed down before then!)

What you need:

125g butter, softened

1/2 C raw sugar

2 tsp grated lemon zest

1 egg

1 1/4 C SR flour (I used GF)

200g macadamia nuts, roughly chopped

What you do:

Preheat the oven to 180 and line a baking tray with baking paper

Using an electric mixer combine the butter, sugar and lemon zest until it’s light and creamy

Add the egg and beat until combined

Add in the flour and macadamias and mix with a wooden spoon until combined

Scoop out table spoon sized balls of the dough and place on the baking tray, flatten a bit (make sure you leave some space in between the biscuits as they will spread a bit)

Bake for 15 – 20 minutes or until golden.  Let cool on the tray for about 10 minutes and then transfer to a cooling rack to cool completely.

Lemon Macadamia Cookies – Thermomix

Makes 10 - 12

Ingredients

  • 3 - 4 strips of lemon rind
  • 125 g butter, softened
  • 110 g raw sugar
  • 1 egg
  • 200g macadamias
  • 160 g SR flour (I used GF)

Instructions

  1. Preheat oven to 180 degrees and line a baking tray with baking paper
  2. Put the lemon peel into the TM and grate Speed 7 / 4 seconds, scrape sides and repeat speed 7 / 4 seconds, scrape sides
  3. Add the butter and sugar and beat Speed 4 / 7 seconds
  4. Add the egg and combine Speed 3 / 3 seconds
  5. Add the macadamias and chop/combine Speed 7 / 2 seconds
  6. Add the flour and combine Speed 3 / Reverse / 6 seconds
  7. Scoop out tablespoon sized balls of mixture and put on the baking tray, flatten slightly. Leave space between each biscuit as they will spread
  8. Bake for 15 - 20 minutes or until golden. Allow to cool on the tray for 10 minutes and then transfer to a cooling rack.
  9. Can be stored in an airtight container for 2 - 3 days (if not wolfed down before then)!

    Macadamia cookies are one of my all time favourite treats but with lemon too? What a brilliant idea!
