Orange & Date Muffins

We’ve been busy baking these last few days in readiness for going back to school and trying out some new recipes.  Well new recipes for us anyway, remember the handed down recipes cook book I went through when we were visiting the Tablelands?  Well these Orange & Date Muffins are from that.  I tinkered with the original recipe a tiny bit, not that I really I have any place doing that but I reduced the sugar a bit and then Thermomix it too. You could probably do away with the added sugar altogether if you wanted as with the orange & dates they have their own natural sweetness.

We tested these out on a play date and I was given 4/4 thumbs up, happy days and straight to the lunch box repertoire they go!

Ingredients

  • Flesh of 1 orange (save about 1/4 of the peel)
  • 80 g of fresh orange juice (this is about the juice of another whole orange
  • 85 g medjool dates (about 6)
  • 125g butter
  • 1 egg
  • 55 g sugar
  • 170 g plain flour (I used GF)
  • 1 tsp bicarb soda
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 200 C and line a 12 hole muffin tin with muffin cases
  2. Put the orange, orange juice, orange peel, dates, butter, egg & sugar in the TM and blitz Speed 8 / 15 seconds. (Go again for 5 seconds if you want a smoother consistency ie. hiding the fruit from the fussy ones). It will look like curdled eggs at this stage but don't panic
  3. Add the flour, bicarb, baking powder & salt and gently combine. Reverse / speed 3 / 6 seconds
  4. Pour into the prepared muffin tins and bake for 15 - 20 minutes or until golden
  5. Remove from oven and cool in the tray for 5 minutes before transferring to a wire rack to cool completely (they are really good warm though!).
  6. Can be frozen.

This is all that was left from 6 that I left on the bench! Luckily I got some in the freezer before they found them.

What you need:

1 orange

1/2 C orange juice

1/2  chopped medjool dates

125 g butter, room temp

1 egg

1 1/2 C plain flour (I used a GF one, Sorghum)

1/4 C sugar

1 tsp bicarb soda

1 tsp baking powder

1/4 tsp salt

What you do:

Preheat the oven to 200 C and line a 12 hole muffin tin with patty pans and 6 mini muffins

Peel the orange and cut into small pieces and save about 1/4 of the peel.

Place in food processor along with the juice, dates, butter, egg and sugar

Process until the mixture is well combined (this will look curdled)

Sift flour, bicarb, baking powder and salt and fold gently into the mixture until just combined

Spoon into 12 – 16 patty cases until 3/4 full and then bake in the oven for 15 – 20 minutes or until golden

Allow to cool in the tray for 5 minutes and then transfer to a wire rack to cool completely (but they are really nice warm!)
