Easy Gingerbread Muffins – perfect lunch box snacks

There’s nothing like coming back from a fabulous weekend away without children and having to face school lunch boxes to bump you back into reality is there?  I hadn’t had a chance to do the food shop yet so had to come up with something from pantry staples for the girls to take to school and Easy Gingerbread Muffins were what popped into my very random mind, easy being the important word!

Muffins are great because they can be frozen so that you don’t have to find yourself in the same situation as I did after a weekend away & no food in the house or just for when you can’t be bothered as well.  These ones are particularly easy and can be made in the one bowl – yay for that!  They don’t have too much sugar and have the delicious gingerbread flavour that I think everyone (other than my fussy one who changes her mind regularly on it) loves gingerbread don’t they?

I’ll start with the Thermomix method and then scroll on down for the regular version.

Gingerbread Muffins

Easy Gingerbread Muffins - Thermomix

Ingredients

  • 125 g butter, roughly chopped
  • 2 eggs
  • 90g brown sugar
  • 210g milk of your choice
  • 270g plain flour (I used GF)
  • 1/2 tsp bicarb soda
  • 1/2 ts sea salt
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves

Instructions

  1. Preheat the oven to 180 degrees and line a 12 hole muffin tin with patty cases
  2. Melt the butter 80 degrees / speed 3 / 3 minutes allow to cool a bit
  3. Add sugar, eggs and milk and whisk to combine Speed 4 / 5 seconds
  4. Add all the remaining ingredients and combine Reverse / speed 4 / 8 seconds
  5. Scoop into prepared muffin cases and bake in the oven for 20 minutes or until they spring back when touched
  6. Cool in the tray for a few minutes then turn out onto a wire cooling rack to cool
  7. They are especially yummy warm
  8. Can be frozen

Okay now for the regular method.

What you need:

2 C plain flour (I used GF)

1/2 tsp bicarb soda

1/2 tsp sea salt

2 tsp ground ginger

2 tsp ground cinnamon

1/2 tsp ground cloves

2 eggs

3/4 C brown sugar

1 C milk (whatever type you prefer)

125 g melted butter

What you do:

Preheat oven to 180 degrees and line a 12 hole muffin tray with patty cases

In a large bowl add the melted butter, eggs, milk and sugar and whisk to combine

Add all the other ingredients and gently fold in until just combined

Scoop the batter into the prepare muffin cases and bake in the oven for 20 minutes or until they spring back when touched

Cool in tray for a few minutes and then transfer to a wire cooling rack to cool completely

They are really yummy warm too

Can be frozen.

    Yep, I can most definitely conjure up the smell of these right now Vicki! And I also most definitely love gingerbread 🙂 Isn’t it the worst coming back from holidays and being stuck for both ideas and supplies? I’m impressed that you whipped these up on such short notice and without much in the house!

    I do love gingerbread, especially in a muffin. We made some at Christmas and the house smelled divine! I always have a batch of muffins on standby in the freezer for a lunchbox treat or breakfast on the go!

    I love muffins of all kinds…so perfect for throwing in the freezer and pulling out for lunches. Gingerbread is such a great flavour so I know these muffins will be incredible!! Can’t wait to try them 🙂
