Cinnamon Swirl Loaf

Do you need some new back to school baking ideas for the lunch boxes?  This Cinnamon Swirl Loaf is full of all the yummy flavours we love and is perfect for the lunch boxes, morning or afternoon tea or anytime time you feel like a treat.  Like maybe right about now?

It’s delicious warm straight from the oven but even nicer with the glaze artistically ribboned across the top – ok maybe not so artistically, icing isn’t my strong point as you can see!  You can also get creative with the cinnamon swirling if you want and see how many you get through the cake.  Whatever, there is something about the smell of a cinnamon cake that warms the heart don’t you think?

Cinnamon Swirl Loaf

I’ve got both the normal method and Thermomix version to share – scroll down for the Thermo one.

This can be frozen as a whole cake to use at another time or could be sliced and individually wrapped in cling film and frozen for up to 3 months s you’ve got something set aside for those days when you need something but have nothing!

What you need:

For the cake batter:

2 C Plain flour (I used GF)

1 Tbsp baking powder

1/2 tsp salt

1/4 C raw sugar

1 egg

1 1/2 C milk

1/3 C Greek Yoghurt

1 tsp vanilla extract

For the Swirl:

1 / 3 C brown sugar

2 Tbsp melted butter

2 tsp cinnamon

For the Glaze:

1/2 C icing sugar

2 Tbsp milk

What you do:

Preheat the oven to 180degrees and grease and/or line a loaf pan

Mix together the sugar, egg, vanilla, Greek yogurt, and milk in bowl until combined.

Stir in flour, baking powder & salt and combine

In a separate bowl or jug prepare the swirl by mixing brown sugar, melted butter and cinnamon together.

Pour about half the batter into the prepared pan.

Spoon ½ of swirl mix into different spots in the batter then use a knife and swirl around.

Add the remainder of batter on top and spread evenly

Repeat the swirl step and smooth over the top

Bake in oven for 45-50 minutes or until an inserted skewer comes out clean

Allow the loaf to cool on a wire cooling rack

Mix glade and pour over loaf

Now for the Thermomix version

Cinnamon Swirl Loaf – Thermomix

Ingredients

    For the batter
  • 260 g plain flour (I used GF)
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 55 g raw sugar
  • 1 egg
  • 380 g milk
  • 65 g Greek Yoghurt
  • 1 tsp vanilla extract
  • For the swirl
  • 35 g brown sugar
  • 2 Tbsp melted butter
  • 2 tsp ground cinnamon
  • For the Glaze
  • 1/2 C Icing sugar
  • 2 tbsp milk

Instructions

  1. Preheat the oven to 180 degrees and grease and/or line a loaf pan
  2. Put all the batter ingredients in the bowl and combine Speed 5 / 4 seconds set aside
  3. Prepare the swirl mix, if you have 2 bowls melt the butter 80 degrees Speed 3 / 2 minutes and then add the sugar & cinnamon and combine Speed 5 / 3 seconds or just melt the butter in a saucepan or microwave and mix through the sugar & cinnamon.
  4. Pour about half the batter into the prepared pan.
  5. Spoon ½ of swirl mix into different spots in the batter then use a knife and swirl around.
  6. Add the remainder of batter on top and spread evenly
  7. Repeat the swirl step and smooth over the top

      Oh Yay! I hope they like it, a friend made it on the weekend and swirled blubberries through it too as an extra touch.
