Pumpkin Mash in the Thermomix. So simple to make and such a versatile dish.  Have it as it comes, as a side dish with a meal, it’s yummy with schnitzel or bangers and mash or as a topping on a pie like Lamb Curry or the good old Shepherd.  I use it a lot as a sausage roll filling

Pumpkin Mash in the Thermomix was one of the first recipes I put up when I started the blog but I’ve updated this post with some new photo’s (the old ones didn’t do the mash justice), it’s proven to be one of the most looked up recipes on Boiled Eggs & Soldiers, who knew? Obviously there are a lot of Thermomix pumpkin mash fans out there!

Thermomix Pumpkin Mash

It’s handy to make up a big batch and freeze some so that you have it ready to pull out when inspiration takes you!  It’s also a brilliant baby food too. On the nutritional side pumpkin is very good for you, it’s low in calories, has no saturated fat or cholesterol, is high in dietary fibre, vitamins, minerals and anti-oxidents so all good reasons to get some into you!

My pumpkin of choice is the butternut as I like the sweeter taste but anything goes really.  Depending on your pumpkin you may or may not need to do the puree step, often I find the consistency is just right without it.

Pumpkin Mash in the Thermomix

Ingredients

  • 600 g butternut (or pumpkin of choice) roughly cubed
  • 100 ml milk or water
  • salt & pepper to season

Instructions

  1. Place milk or water and pumpkin into the bowl and cook 17 - 20 minutes / 100 C / speed 1
  2. Puree 6 seconds / speed 6
  3. Done

    Have made this a couple of times! Delicious! Didn’t use butternut which is a more solid pumpkin! Mine tend to become a purée but still delicious! Thanks for the recipe!
