Mega Tim Tam Christmas Rocky Road – have I got your attention?  I’m sure I’ve got someones in your household, am I right?

Do you get into the Rocky Road at Christmas time? I wonder why we do, what is actually Christmassy about it? I don’t know the real answer to that question but I do know we like to make it, eat it and hand it out as gifts.  Over time we have come to call it “Reindeer Poo” because with young kids toilet humour is where it’s at, right?

Anyhoo, I wasn’t going to make any this year because at the moment I’m all about outsourcing as much as I can with establishing the new business and all that (A Box Of… in case you wanted to know!) but I was having a sore neck sorted out by the lovely Brooke who does amazing massages and the topic of Rocky Road came up – well why not when you are face down with your bones cracking!  I had the girls with me being school holidays, bribed with the iPad to stay quiet while I got treated and their little ears pricked up at the mention of Brookes favourite way to make it… because they were so good I had to promise that we would make it when we got home.

I know that I’m normally on the healthy end of the spectrum so now is the time I have to mention that there is nothing remotely healthy about this Rocky Road (or any other really) but it is definitely a Mega Christmas Rocky Road that is full of gold, rubies & chocolatey delight a very worthy Reindeer Poo at that!

What you need:

500g Chocolate (melts, bits, block) also milk or dark chocolate whatever your preference

1 1/2 C (90 g) marshmallows, roughly chopped

6 (100g) Tim Tams, roughly chopped

1 (50g) “Crunchie” (honeycombe chocolate bar), roughly chopped

1/4 C (35 g) dried cranberries

20 g coconut oil

Mega Rocky Road ingredients

 

What you do:

Line a lamington/slice tray with baking paper

Put the chocolate & coconut oil in a heat proof / microwave safe dish and melt the chocolate – medium temperature for 3 minutes stopping to stir with a spoon occasionally (alternatively gently heat on cook top until melted and combined stirring constantly) until smooth

Stir through all the remaining ingredients until all combined

Pour into the prepared tin and smooth out. Place in the fridge for about 3 – 4 hours or until set

Once it’s set chop it up with a sharp knife and either package up into cellophane bags or in an air tight container. Store in the fridge (especially if you live in North Queensland where everything melts in an instant!!)

Thermomix Method:

Line a lamington/slice tray with baking paper

Chop chocolate Speed 9 / 10 seconds. Scrape sides

Add coconut oil and melt Speed 4 / 50 degrees / 3 minutes

Add all the rest of the ingredients and combine Speed 2 / Reverse / 10 seconds

Pour into the prepared tin and smooth out. Place in the fridge for about 3 – 4 hours or until set

Once it’s set chop it up with a sharp knife and either package up into cellophane bags or in an air tight container. Store in the fridge (especially if you live in North Queensland where everything melts in an instant!!)

    I think it’s an Aussie thing, I don’t think we ever had it in the UK and not at Christmas. We’re quite addicted, I try not to make too much of it, because I have a tendency to eat it before I gift it! Tim Tams and Crunchies, what a winning combination!
