Pea, Corn & Fetta Fritters

These Pea, Corn & Fetta Fritters are great if I do say so myself!  They go well topped with smashed avocado & baked prosciutto as an easy canapé with drinks but also in lunch boxes or as part of a meal. We’ve tested them out all three ways and they have been winners every time (ok I admit my fussy one turned up her nose but that’s par for the course these days! everyone else loved them).

Do you have fussy eaters in your family?  I have resorted to bribery, our deal is if she at least tries 2 – 3 new things each week (she doesn’t have to like it but she does have to try), then she can down load a new (free) app on the iPad. So far so good and she’s even surprised herself by liking some of them even though she tries not to show it!!

Anyway that has nothing to do with these easy peasy bite sized fritters.  I made them in the Thermomix but a blender will do and even by hand if you don’t need to disguise any veggies!

Pea Corn & Fetta Fritters

Shall we jump straight into the recipe?

What you need:

240 g frozen peas & corn, defrosted (or 120g of each)

2 eggs

2 spring onions, roughly chopped, white part only

30 g plain flour ( I used GF)

60 g fetta, crumbled

1 /2 tsp baking powder

salt & pepper to taste

2 – 3 Tbsp coconut oil (for frying)

What you do:

Put peas, corn, eggs and spring onions into TM bowl (or blender or finely chop the spring onion and whisk everything together), Chop Speed 6 / 10 seconds or longer if you really need to hide evidence of vegetables!

Add the crumbled fetta, flour, seasoning and baking powder and gently combine Speed 4 / Reverse / 3 seconds

Heat the coconut oil in a fry pan over a medium/high heat and drop bite sized spoonfuls of the batter into the pan.

Cook until golden brown on one side & flip and cook until golden on the other side.

You may need to add extra oil as you get through the batter

Drain on kitchen paper and enjoy warm.

Serving suggestions:

Smash some avocado with a squeeze of lemon and top with baked pancetta / prosciutto / bacon

Make into larger fritters and top with avocado and a poached egg, YUM!

These are also fine on their own in lunch boxes the next day too

    These look delicious. I have a fussy eater too but he’s not as easily bribed with apps! That said, he’s a big fan of fritters so I bet he’d give these the thumbs up!
