Cheesy Chicken Potato Bake

I know this photo makes this Cheesy Chicken Potato Bake look like it’s straight out of a 70’s recipe book but it’s actually my lack of talent in the night time photography department rather than a reflection on this super simple, delicously yummy mid week meal.

This could be called a one pot wonder or a winner winner chicken dinner as you just keep adding the ingredients to the one dish but I did a side dish too so it’s no longer technically one pot. Regardless, this is easy to make and full of flavour.

I steamed broccoli & cauliflower to go along with the dish, a salad would also be good or you could add extra veggies in to the dish when you add the chicken and roast them along with it. If steaming veggies just put them on  with 10 minutes to go until you are ready to serve up.  There’s nothing complicated or fancy about this meal and it’s a great one to add to your regular repertoire.

Cheesy Chicken Potato Bake


  • 4 medium potatoes (any kind)
  • 1 large sweet potato
  • 500g chicken thigh fillets
  • 2 Tbsp olive oil
  • 1 large garlic clove, crushed (or 2 small)
  • salt & pepper
  • 3/4 C mozzarella


  1. Preheat the oven to 220 C
  2. Chop all the potatoes into bite sized pieces (ok to leave skin on, I peel the sweet potato & leave the skin on the white which is just a personal preference) and put into a baking dish (that you can also serve in).
  3. Add the olive oil, salt, pepper and garlic and toss so that the potatoes are coated.
  4. Bake for 15 minutes tossing halfway through.
  5. Add the chicken to the dish and toss around
  6. Bake for a further 20 minutes
  7. Sprinkle the mozzarella over the top and bake again until melted (5 minutes or so)
  8. Garnish with parsley if you like & serve
