Baked Fish with Roasted & Steamed Veggies



We regularly have Baked Fish with Roasted & Steamed Veggies for dinner as it’s super healthy, quick and easy. It’s a no fuss mid-week dinner, that can be ready from start to your plate in 35 mins.  We like that right and it’s a no brainer way of getting some more fish into your diet.

You can use any type of fish that suits your budget but there was some good looking snapper at the fish shop today so that is what we are having (it was worth it!).

Baked Snapper with Roasted & Steamed Veggies


  • 1 large sweet potato, peeled and cut into wedges
  • 1 large potato, cut into wedges (I used a desiree)
  • 1 large zucchini cut into thick strips
  • 1/2 head of broccoli, florets only
  • green beans (for your family size)
  • 4 snapper fillets (or whatever fish suits your budget)
  • Olive oil
  • 1 lemon
  • Salt & pepper to taste


  1. Preheat oven to 200 degrees and line 2 baking trays with baking paper.
  2. Put prepared potato and sweet potato on baking tray and drizzle with olive oil and bake for 20 minutes turning after 10 mins, then add the zucchini for a final 10 minutes (so potatoes have 30 mins in total).
  3. In the meantime boil a small amount of water for steaming or heat up steam oven and steam green veggies for 6 - 8 mins.
  4. Place fish on the other baking tray, drizzle with a little olive oil and a squeeze of lemon and bake for 10 minutes
  5. Serve up and season with salt & pepper to your taste
