Quick & Easy Chicken Stir Fry with Brown Rice


This quick & easy chicken stir fry with brown rice is a great, easy, mid-week meal which can be ready in minutes.  With minimal effort it’s filling and pretty healthy even if it’s not all that pretty to look at!  You could substitute the chicken for any type of meat.

Timesaver Tip: As it’s with brown rice that takes about 35 – 40 mins  you can make it ahead of time and then add to the wok at the end to heat through or it can be made even faster if you use the packet microwave rice – (I sometimes use those when in a hurry but I prefer not to microwave them just empty the packet into the wok in the last 5 mins of cooking).

Quick & Easy Chicken Stir Fry with Brown Rice


  • 1 1/2 C brown rice
  • 1 Tbsp olive oil
  • 1 onion thinly sliced
  • 500 g chicken tenderloins, chopped
  • 1/2 head broccoli florets, chopped
  • 1/2 red capscicum, diced
  • 4 - 5 mushrooms, thinly sliced
  • 2 C baby spinach
  • any other veggies you want to add
  • 1 Tbsp fish sauce
  • 3 Tbsp oyster sauce


  1. Cook rice as per packet instructions using whatever method you usually do (I prefer a rice cooker as then you don't have to do anything with it. Brown rice usually takes 35 - 40 mins
  2. In the last 5 mins of the rice cooking heat oil in wok over a high heat, add onion, chicken, broccoli and capsicum and stir fry for about 2 minutes.
  3. Add mushrooms & broccoli and sauces and stir fry for another 2 mins or until chicken is cooked through.
  4. Add rice to the wok and baby spinach and mix through
  5. Take off the heat and put into serving bowls
