Fluffy Pancakes




These Fluffy Pancakes are simple to make and devoured in minutes.  If you want to make them gluten free just change the flour to a GF one.

We have ours with lemon and sugar, or honey and banana, sometimes Nutella or plain with some fruit on the side.  I like mine with bacon and maple syrup especially if they have been made by someone other than me!  What’s your favourite way to eat pancakes?

Timesaver Tip: Make the batter the night before and store in the fridge so you are ready to go in the morning.

Fluffy Pancakes for Breakfast


  • 1 C SR Flour or Gluten Free SR flour
  • 1 Tbs raw caster sugar
  • 3/4 C (185ml) milk
  • 1 egg
  • pinch of salt
  • butter for the pan


  1. Sift flour & sugar together in a bowl with a pinch of salt.
  2. Whisk milk & egg together then add to the dry ingredients whisking again until smooth
  3. Heat a non stick frying pan over a medium heat and melt a knob of butter to cover the bottom of the pan.
  4. Drop a tablespoon of the batter into the pan and cook until bubbles appear on the top. Turn over and cook on the other side for 1 minute or until golden.
  5. Cool and eat with topping of your choice.
