Teriyaki Chicken & Soba Noodles

There’s nothing wrong with using a bottle of Teriyaki marinade for a fast, low fat and filling meal ready in minutes!  This recipe is for chicken but you can use the same method with any meat or fish of you like.

Teriyaki Chicken & Soba Noodles


  • 500 g chicken breast stir fry strips (you can do this with any meat of your choice)
  • 125 mls teriyaki sauce
  • 250 g dried soba noodles
  • 2 Tbs olive oil
  • 1/2 head broccoli, cut into small florets
  • 1 zucchini, thinly sliced
  • 1 shallot, sliced
  • 4 - 5 button mushrooms, thinly sliced (optional)
  • 1 bunch Chinese leave or 2 handfuls of baby spinach


  1. Put chicken in a dish and pour over half the marinate making sure you cover all the chicken. Cover and refrigerate for at least 1 hour (if you have time).
  2. Boil a pot of water for the noodles
  3. Heat oil in a wok a large heavy based fry pan
  4. Add shallot and then chicken strips, stir & cook for 2 minutes
  5. Put noodles in the boiling water and cook for 3 minutes or as per packet instructions, drain
  6. Add broccoli, zucchini and mushrooms (if using) to the wok and remainder of the teriyaki marinade, stir & cook for about 2 minutes
  7. Add noodles into the wok and mix everything together
  8. Add Chinese leaves or baby spinach stir through and cook until they have wilted
  9. Serve up & enjoy
