Avocado & Poached Eggs


This is one of my favourite meals, it’s quick, nutritious and a healthy start to the day.  Only takes as long as it takes to poach an egg.

My preferred way to poach an egg is to boil the water in a saucepan and once it’s boiling turn off the heat, crack the egg and gently put it in the saucepan and put the lid on.  Cook it for 3 – 4 minutes depending on how soft you like it and then remove with a slotted spoon – done!  There’s a whole other post in the waiting on cooking eggs, and believe it or not, while I love eggs I’m pretty rubbish at cooking them so GT is usually the egg cooker in our house.

Anyway, back to the method, while the water is boiling, toast the bread of your choice and mash up 1/2 an avocado.  Spread the avocado quite thickly and then put the egg on top when it’s cooked. Add salt & pepper to your taste.

    Oh wow. That is so easy! I love poached eggs but usually cannot be bothered but this makes it much easier! Ill definitely be trying it. Eggs, avocardo and feta on toast is one of my all time fave meals. Brekkie, lunch or dinner. Also love a bit of dukkah sprinkled on top! Xx
